Use for hot and refreshing cold teas as a lemon substitute. Leaves may be added to salads. Essential oils are volatile resulting in more fragrance than flavor. Medicinal: Lemon balm has anti-viral action (in lab tests) against herpes simplex, mumps, and other viruses. Also a sedative, calmative, and carminative.
