My bees produce their honey from a wide variety of wild flowers and trees. I extract the honey 2 or 3 different times to take advantage of specific varietal productions. When I extract, I don't heat my honey or super-filter it. I use a fine-grade nylon filter to clean it as the honey leaves the extractor. By not heating the honey, it retains most of the floral fragrances that were in the nectar as the bees gathered it. This allows my honey to have a full, robust flavor and fragrance, that is lacking in most commercially packaged honeys.
