(Fairbury,IL)Spence Farm is the oldest family farm in Livingston county, IL, settled by our fourth great-grandfather in 1830. Still a thriving family farm, we grow delicious foods of all kinds using sustainable organic methods that will keep our farm vibrant for future generations. Beginning our season with 100% pure maple syrup, we move into green garlic, heirloom vegetables, and grains. It's our pasion to bring the freshest, most unique and flavorful products to our customers. Our farm is known to restaurants across the nation for sustainably wild harvested products including stinging nettles, paw paws, mushrooms, and much more. Many of our heirloom vegetables and grains are listed on Slow Food's Ark of Taste, including our Iroquois White corn that is hand roasted and milled into a intoxicating corn meal. Constant research to find the rarest of products keeps us and our customers on the cutting edge of culinary trends. Our heritage livestock are raised completely pasture and grass fed. Our American Guinea Hogs are listed on the critical list of the American Livestock Breeds Conservancy as well as the Ark of Taste. Our free-range poultry's eggs are incredibly colorful and nutritious. Spence Farm is honored by its features in the New York Times, Chicago Tribune, and various other publications, as well as on PBS, NPR, and Canadian Food Network.
