Aayla's Folly

(Hammond,NY)

We are a small family farm specializing in organically grown open-pollinated heirloom / heritage vegetables, fruits, grain, and free range eggs. Because we love our work and still do most of it by hand, we can grow those labor-intensive old-world specialties that commercial growers won't touch. Our range includes many unusual European, Asian, and specialty products that you will not find in your local supermarket. Over half of our seed is imported directly from Europe and Asia as there are no high quality sources in the US for these often rare and unique varieties. Customers are usually struck by the tremendous variety we grow on our tiny eight acre vegetable plot, over 600 different items! Never tried raddicio? We offer 15 types including red, green, looseleaf, round head, tall head, palo rosso, treviso, and pan di zucchieieri varieties. Think potatoes are boring? Our 30 varieties include white, yellow, red, and blue skin and flesh, fingerlings, heirlooms, and rainbow baby potatoes. Other specialties include three colors of French filet beans, 70 salad greens, heirloom hardneck garlics, baby lettuce leaf mix, microgreens, wild herbs, custom mesclun mixes with up to 35 ingredients, edible flowers, at least three types of basil, 40 heirloom tomato varieties in red, yellow, green, orange, red, purple, white, and variegated colors, purple asparagus, rainbow Tuscan lacinato kale, black garbanzos, Italian Borlotto Lingua de Fuoco beans, pea shoots, purple Japanese sweet potatoes, red and yellow cipollini and red Tropea torpedo onions, and on and on and on. Our location in frigid upstate New York on the narrow strip between the Saint Lawrence River and the Adirondack Mountains provides a constant flow of clean cold air from the West. The growing season is short and wet, the soil shallow and heavy, but the constant migration of trace minerals from the bedrock only inches below the surface makes for a uniquely delicious and complex flavor. We never use pesticides, herbicides, or other chemicals. Our pest controls are crop rotation, companion planting, good soil health, mulch, and hand weeding. In addition, we are returning 25 acres of fields to forest and native meadows to encourage biodiversity and provide habitat for beneficial insects, birds, native pollinators, bats, amphibians, and reptiles. Fertilizer is provided by cover cropping and compost. Our products were originally intended for the gourmet restaurant and specialty produce markets, but due to increased consumer awareness and demand, we are now making them available to the generally public. Prices are generally less than you would expect to pay for conventional high quality produce in a grocery store.
