Hood's Heritage hogs home of the critically rare Red Wattle Hog. You are what you eat is an old adage. While most pork raised in the U.S. is the result of years of selective breeding for mass production, a standard size and consistent flavor, Red Wattles are being conserved for their gentle temperament and the excellent flavor and texture of the pork they produce. Red Wattle pork tastes nothing like "the other white meat." Its juicer, with fat that is buttery and melts away in the cooking process, its deeper red and, well, just plan delicious. Eating Red Wattle pork supports sustainable small farms, and protects biodiversity. And it tastes delicious. Here at Hoods Heritage hogs we raise hogs naturally. No confinement housing, no growth hormones, no subtherapeutic antibiotics and no artificial insemination. Just pigs allowed to live naturally doing what pigs do. We do out best to give our Red Wattles the best possible life while they are with us. And yes they have names and we pet them and give them treats. Just because their destiny is the dinner table doesn't mean they don't deserve loving care. When their time comes, our hogs are loaded carefully onto the trailer to reduce stress on their one and only trailer ride. Red Wattles are listed by the American Livestock Breeds Conservancy as Critically Rare. To save them we have to eat them. Sounds counter intuitive, I know. We all know if you want to save an endangered wild animal you set aside land and you stop people from killing them. Livestock is a different story. Red Wattles are bred to provide succulent meat for the table. If there is no demand for RW pork, people will stop raising them and they will go the way of the Dodo bird.
