Adirondacks. Our cattle are born and raised on the farm. They eat only our pasture grasses during the growing season and then hay from only our fields in winter. The cattle are unconfined on over 60 acres of pasture year-round. We are a small, third generation family farm practicing environmentally sustainable pasture-based farming. We dry age our beef using the "swinging beef" process rarely practiced anymore. This method ages every cut giving the meat a deep concentrated flavor. We are proud to have received the third-party seals of approval from Animal Welfare Approved and the American Grassfed Association.
