Raw honey varies widely in color, flavor, texture and scent. Santa clara is a valley of microclimates, and the honey flavors reflect the primary sources of nectar in the immediate area.

neighborhood nectar comes from bees which have been relocated from the walls, soffets, garden sheds, stucco walls etc of homes all over santa clara county. To retain the varietal flavors, combs are extracted separately to prevent the aromatics of honeys from herbs like lavender and dill from being swamped by the intensity of fruit blossoms and garden flowers.

each jar is identified by both the community where the bees were located and by color. The selection is varied, so if a particular community or color is preferred please note that in your "email us" request.

honey colors are based on mineral content. Light colors tend to be mild in flavor, so for intensity and lingering aftertaste the darker the better. Raw honey contains vitamins b1, b2, b6, c, e, k, and a plus calcium, phosphorous, potassium, iron, copper, manganese, magnesium, sulfur, zinc, trace enzymes, minerals, and antioxidants. Pollen is a key contributor, as pollen is extraordinarily high in protein and amino acids.

most of the honey on supermarket shelves bears little resemblance to the "nectar of the gods" that poets wrote about. Processors blend and cook honey to almost 200 degrees and force it through pressurized filters to remove the pollen, enzymes, proteins, vitamins and other phytonutrients of honey.

in march 2004, researchers at uc davis reported that raw honey has cancer-preventing and anti-tumor properties. It increases the blood levels of phenolics, an antioxidant compound that squelches the cell-damaging action of unstable free-radical molecules. health benefits are not news to folk medicine practitioners, who have long prescribed two tablespoonfuls of comb honey twice a day from local bees to reduce allergies and relieve stomach ulcers. Homeopathic remedies have a rich history, the romans used honey as an antibiotic salve for wounds because it kills bacteria and more than half of the known medications used in ancient egypt were based on honey.
