It's time for another LocalHarvest cookbook giveaway! We were especially excited to get a copy of author Sherri Brooks Vinton's Put 'em Up! because it is such a beautiful and accessible introduction to food preservation. Plus, it's a lot of fun. Her conversational style, step by step instructions, and creative recipes all make the book a fun one. Page through Put 'em Up! and you are sure to be inspired to preserve some of the late summer's bounty.

In southern California, there is an abundance of prickly pear cactus (opuntia) that yields the red fruit in the fall. I like to harvest it, squeeze the juice and make jelly. This is about my 4th year, and it is very labor intensive, so I have techniques to get the stickers off, process the pearfruit and have juice to last for months. It keeps well in the refrigerator or can be frozen.

I have canned a lot of pickles this year. I also bought a freezer so I have made chicken broth, lots of greens, and tomatoe sauce for the freezer.

This is the time for doing my yearly supply of hot pepper jelly and for the first couple of weeks my family will put it on every thing. I absolutely love it and it turned out very hot this year and yummy....

While we don't have a big enough garden to grow a lot of food, we do like to buy local produce & can it. If volume is what you're after, see if there's a community cannery nearby: you can turn out MANY cans of stuff in a few hours--they have the equipment & know how. This weekend we'll show up with two bushels of tomatos and the last of the basil from our garden to make canned tomatoes (1 bushel) and marinara sauce (the other bushel). We've also canned brunswick stew, applesauce, green beans, and corn (the last two got a bit tough).

But, for home canning, I make a wicked watermelon pickle. Trouble is, it's hard to find those big old thick-rind 'Rattlesnake' watermelons since everyone is growing the little ones. But, the old picnic type watermelon makes a mighty fine pickle to go with country ham at the holidays! I remember my mother making plum jelly from the wild plums near our yard, apple jelly, strawberry jam and damson plum preserves (still one of my favorites!).

I'm a newbie, too. The only thing I've preserved is freezer strawberry jam and frozen raw tomatoes. I'd love to can some salsa, relish & pickles to enjoy in the winter. And lots of fruit - canned peaches are the best! And probably some veges, too; they just aren't as appealing, but will be more useful.

Canning apples and pears can be fun even in little amounts. I am single and can just a few pints at a time. Pears are especially fun to experiment with - use green food coloring and a little creme d'menthe, use a small amount of red food coloring and add cinnamon, etc. Good eating in the winter!

I inherited a small citrus tree from my father...I guessed it was a lemon tree...After a few years of care I found it was a kumquat tree..I decided to make kumquat jam ..It was a treat for the whole family...Each year I remember my dad as I make the jam....

I am new to container gardening and canning/preserving. I would love to know how to can stewed tomatoes for my tomatoes next year. I just didn't do so well keeping up with everything this year with the birth of our daughter in May. I would like to be able to teach her when she is older for her family someday.

I have found a way to enjoy this years harvest and have a crazy canning session w my soon to be in-laws. I have decided to do a no traditional wedding shower next summer in the theme of a mexican fiesta. so this year we harvested tons of tomatoes and peppers from my future father in laws garden, and made about 70 jars of homemade salsa. I will be giving these away as shower favors for next summers main event. I cant wait to hand them out! DELISH!

My canning project this year is anything fig. I have canned fig jam made with a variety of figs from our local farmers market, and also fig chutney from a recipe on Last year I canned blueberry jam for Christmas presents. I am trying to work up the courage to make something with tomatoes. I keep seeing good reviews on Put 'em Up and would love a copy.

I have been canning veggies for about 30 years. I just learned this summer, how to preserve jams and jellies! I even made Orange Marmalade! It is awesome , if I do say so myself!!!

I am green as grass to this canning wonder. I find myself with amazing tomatoes coming on like gang busters....what can I do with them!!!? HELP!!! :) My first first attempt would be to can tomatoes so we can be reminded of summer during our cold dreary winter.

I am a canning newbie. I am trying to figure out a way to begin. I would love to purchase this book if I don't succeed at having my name drawn. Can you post that info so that I can follow-up? With all the farmers markets getting their end of summer and fall goodies I want to be able to take advantage of what is available.

I freeze my local food all the time- kale, collards, peaches, berries, apples, broccoli, and anything else I can throw in my Vita-Mix later- but would enjoy actually preserving some of them. Fresh blueberries or tomatoes in the middle of winter is fantastic!

I have been canning for 47 year. I started helping my mother when I was ten and have never stopped. For most of the those years, everyone thought I was nuts, but it kept us fed when money was scarce. Now, I am showing others how to do it. I am glad that I was "crazy" all those years, because we are all healthier and our children and grandchildren are happy eating almost everything. My favorite food to can is tomatoes. My mother could make a hundred different recipes with a quart of canned tomatoes. Wouldn't you know, I married a man that never wants to see a piece of tomato in anything.

My wife and I ventured into gardening this spring. I tilled up about 1,000 sq ft of an old cow pasture (GREAT place to put a garden!) and planted a LOT of seeds and seedlings. Needless to say, we had an overabundance of tomatoes and an exorbitant amount of cucumbers, not to mention potatoes, watermelon and pumpkins. So, we then found ourselves venturing into canning and pickling! My wife is lucky enough to have a grandmother close by who is an expert at preserving food, and she was more than willing to give my wife a crash course.

Just started canning - for my first attempt I tried red sauce and was unsuccessful (didn't fill the jars up enough) so I'm going to give it another go. Planning on trying applesauce for my next try. Fingers crossed it goes a little smoother.

My favorite is stewed tomatoes. I use some of my grandmothers old blue canning jars. Applesauce I freeze. Like this site and my local farmers market is always great...

I am a newbie also but would love to learn how to can tomatoes and tomato sauce. We already make our own spaghetti sauce now we just need the added step of our own tomato sauce to make it!

I used to can with my mom when I was young. My favorite was strawberry-rhubarb jam. Can't wait to do it again. It's fun to grow tomatoes, etc. but the bumper crop shouldn't go to waste, so salsa, etc. are good options.

I am new to Wa state after haveing grown up in eastern Wa and leaving to "go on my own" Im now back on the coast of Washington. I can't wait to relearn all my canning skills from my dear Mom of 76 yrs young!! and put up my own healthy foods! I'm planning on canning Tuna and Salmon, and thanks to Local harvest I'll be able to find all my vegetables and fruits to can also!!

I made my first attempt at canning just 3 summers ago for the local county fair. It is so much fun and I have learned a lot from the other women in my Home Extention group. But, . . .I have tried canning peaches the past 2 summers and no one can tell me why my peaches float after they cool. I have them packed so tighly another sliver will no go in. I hope "Put em Up" will help me with my delema. There is something to be said for "practice makes perfect" but it helps to start out with the direction of someone who has been there before.

I'm enjoying Local Harvest. I'm new to the site but want to make it a regular stop. Diana

I love to preseve and grow a garden just to do that. Tending the garden is alot of hard work but also a great stress reducer. I mostly freeze because I don't have to buy all the canning supplies but hoping next year to stock up on jars since we raise and butcher our own meat I'm finding the freezer is running out of space.

Our pear tree is laoded this year, but our apples didn't do well. going to try making "pear" sauce this year in addition to the pear halves. Am still sort of a newbie when it comes to putting things up....need to try to think "out of the box" when it comes to other ways that I can put things up other than canning. This book looks great!

Cliche as it is, we can tomatoes like crazy. We just blanch them and cram them in the jars whole. Then it's pizza sauce, tomato sauce, and tomato soup all winter long.

Pickled green walnut preserves, one of the centuries-old European customs to deal with the "June drop" of English walnuts trees, is my favorite annual canning project. Malt vinegar just makes you smack your lips! We also dry Asian Pear slices, as well as making fruit leather with the pears also. Finally, have you ever heard of "Walnut Leaf Wine" wherein, lowering the annual leaf piles just a bit, walnut leaves and honey are used to brew a wondrous adult beverage, along with the annual Nocino beverage from, guess what, English walnut June drops. We grow yellow, red, green, and purple tomatoes, and one of the prettiest gifts I have given friends is jars of these tomatoes (dehydrated slices) layered by color, filled with organic EVOO. They are so pretty, and sooo delicious on our salad in the middle of winter!

My friend Kelly turned me onto Pomona's Universal Pectin .If you're not familiar with this brand it's worth checking out.. It let's you control the type & amount of sweetner you use. I made peach presereves this summer using 1 cup of sugar & 1 cup of honey to 8 cups of peaches. I also made nectarine preseves, pear preserves, e-z pickles, pickled okra & I froze blueberries.

Growing up on a dairy farm,in August, in addition to getting ready for back-to-school, time was spent peeling and juicing tomatoes, cooking crab apple jelly, perserving bread and butter pickles and freezing corn. I thought everyone did that. Well, this farm girl moved to the city and was suprized not every homemaker had a big blue canner in her pantry.

Several years ago, a local couple provided access to lots and lots of fresh raspberries. I perfected a raspberry jam recipe which I enjoyed giving as gifts. Being a working mom, I limited myself to a couple canning evenings a year.

After raising my kids and sending them off to college and beyond, I have rediscovered canning and preserving produce from my garden and expanded my recipe collection. Last summer, as I wondered what to do with all those tomatoes and peppers, my hairdresser gave me a killer salsa recipe to make in a slow cooker. I made 2 batches, 28 pints. With some reservation, I gave a jars away to my girlfriends.

Over coffee a couple weeks age, the girls asked if I have made any salsa this year and if there are any samples they can try. They say my salsa is better than any they have purchased. Even my own son appreciates my salsa making skills and begs a jar or two when he visits. He says he hides it from his roommates. I canned several batches this year and have plenty to share.

I am not yet a canner, but I had a coworker who used to bring in her home made persimmon jam and shared a few jars with a lucky few of us at work. I was the recipient of one of those jars and it was hands down the BEST jam I have ever eaten... Now only if I could learn how to do that! Yum!

As a child my grandmother canned and froze and blanched and we scrubbed and peeled and Then I said "I will never do this" and "it's crazy to do all of this work" Now that i'm older it all makes sense and i find we are getting back into the mind set of the older generation and I personally think we are happier family for it. Now it's my daughter who is enjoying the fruits of our labor, with a little grumbling thrown in.

Hi my name is Pat I began in the kitchen at a very early age watching my grandmother cooking and canning. It was only a few years ago that I decided to try my hand at canning. I began with green beans and squash. The squash however did not do well. Later I tried pickles and this year I made cinnamon pickles for the first time. These turned out great and I plan to give some as gifts. Last year I tried crabapple jelly. This year I grew peppers of various types and cantaloupe for the first time. I would love to try more canning vegetables.

Being a new bride and wanting to show off my canning talents I was thrilled to customize a salsa recipe to delight my hubby's taste. BTW the secret is adding just the right amount of pureed fresh oven dried roma tomatoes!

2 cases of pints later, he loves his customized zesty salsa so much he no longer wants to share the garden bounty with the neighbors, lol!

Also, oven drying our own perfect vine ripe roma tomatoes to skip the cost of buying $8.00 2oz jars of same from the grocery store is good money to put back into next year's garden.

He no longer has any doubts about the value and rewards of canning our own bounty. And I am so pleased!
