Food from the Farm: Ginger Cookies
These are the cookies I make most often for my family, and their spice makes them a nice holiday cookie too. They come together in just a few minutes and the whole wheat flour makes them more nutritious than some other treats. I think you'll like them. Thanks to Marilyn Yank for the recipe.
In a large bowl, stir together 1/2 c. melted butter with 1/4 c. blackstrap molasses and 1 c. sugar. Beat well.
Add 1 beaten egg and beat again.
Mix together in a separate bowl:
Add to wet ingredients and stir.
- 1 c. whole wheat flour
- 1 c. white flour
- 1/4 t. salt
- 2 t. baking soda
- 1 t. cinnamon
- 1 t. allspice
- 1 t. ginger.
Roll into 1 1/2" balls and then roll balls in sugar. Place on lightly greased cookie sheet.
Bake at 350 degrees for 12-15 minutes until firm to the touch.
