Sweet Potato Fries

Sweet potatoes are among the most nutrient-dense foods on the planet. And so good! We eat them most often as "fries," using the simple recipe below. These make a good accompaniment to a bowl of chili or any kind of burger or sandwich.

Sweet Potato Fries

Preheat the oven to 425. Scrub four large-ish sweet potatoes (about 2 pounds) and then cut them into strips or wedges. Put them into a broiler pan or 1-2 sheet pans. If the sweet potatoes are spread into a single layer they will brown more readily. They are good either way.

Sprinkle on 1/2 teaspoon of smoked paprika, if desired. Sprinkle with 1 t. salt. Drizzle on 2 T. vegetable oil and 1 T. olive oil. Use a spatula to toss until the sweet potatoes are coated.

Bake for 15 minutes, then turn the sweet potatoes over. Bake another 10-15 minutes until tender.

Serve immediately.

I do this as well, but I use a warm spice called Piri-piri. I think it is Indian in nature, but it is great with the fries, top them off with a sprinkling of sea salt, Yum!! a no-guilt treat. Works just as well with butternut squash, cut into cubes, good alternative.

Coconut oil is also a good alternative

Try them with chili powder for a little heat - excellent!

Even better and healthier with local duck fat, lard, or tallow!

I also love the using the duckfat with a nice spicy olive oil, then top with Lawry's Seasoned salt, awsome flavors there. I make an Aioli (or use home made mayo) with chipotle chili powder or harissa for a dip, oh boy can this be addicting!

The duckfat also makes them crispier.

Please clarify for me. Isn't Duck fat, Lard, or Tallow totally bad for you. Saturated Fat. I thought olive oils and other heart healthy oils were the healthy choices for our day. I am not being critical, I am trying to learn more about eating more healthy. Is there something I need to learn here. Please let me know. Maybe you are merely talking about flavor and not whether it is more heart healthy. If so, my apology ladies.
