It is an excellent cover crop for eroded soil and is used in Permaculture design projects to create fertile soil high in nitrogen and potassium. Try planting seed potatoes by placing a piece of the tuber on a comfrey leaf. Comfrey leaves also make an excellent mulch or addition to the compost pile to hasten decomposition.
