Edamame

Edamame, or vegetable soybeans, are fresh soybeans that have been lightly cooked within their pods. Delicious as appetizers, edamame are a healthy fresh alternative to chips and other high-fat, low-nutrition nibbles. Soybeans are the highest in protein (35 percent) of any plant, and contain the most complete complement of amino acids.

Most soybeans in the U.S. market nowadays are genetically modified. In many cases, the soybeans are modified to be tolerant to ever-increasing applications of herbicides. Some people argue that there's nothing wrong with genetic modification, but the fact is that we know very little, if anything, about the long term effects of GMOs (genetically modified organisms) on our diets and environment. The soybeans used in the edamame sold by Local Harvest's family farmers are not genetically modified.
