Last fall we worked with Red Fire Farm in Granby, MA in the creation of this salsa. The recipe dates back to our days as restaurateurs in the southwest where we traded secrets with our friends Maria and Edgardo who were from the Veracruz region of Mexico. This is an authentic Mexican salsa, canned in small batches using fresh produce from our local farms. We used a variety of heirloom tomatoes as well as paste and slicers so you'll notice some batches taste different than others based on the tomatoes that went into it. Enjoy with warm tortillas, scrambled eggs, or drizzled over mixed greens. Try combining it with our Buttermilk Ranch dressing over your favorite grilled chicken salads!
