Padron is a Capsicum annum HOT pepper. The heat is mild similar to a Jalapeno but with a much more subtle flavor. Peppers can be spicy or hot no matter what size, shape or color.
Please note that size or color do not guarantee a sweet or a hot pepper. Green peppers can be HOT and red can be sweet, same with size, small or large. It is the luck of the draw. Pick when 2 inches and bright green for sweet taste. If grown to maturity, red peppers, most all will be hot.
Pimientos de Padron, Padron Peppers, originally from Padron, Galicia, Spain, these small green peppers from the Capsicum annum family have remained rather unique to Spain where they are popular as a tapas, sauted in a hot pan of olive oil until brown or blistered and sprinkled with coarse sea salt, sometimes stuffed.
Most Padrons are mild with a sweet, pleasant HEAT, 1 out of 5, some say, are eye watering, nose running, pray for mercy hot. Thus the nick name, the Spanish Roulette Pepper!
