Pasilla Bajio-Chilaca-capsicum annum-Also when fresh called chile negro. Peppers grow 8 to 10 inches long and are thin walled. They mature from dark green to dark brown. Sometimes almost looking black in color. Known for it's rich smoky flavor it can be used to flavor any dish. It is called 'chilaca' when fresh and adds character to red chile enchilada sauce and salsas. Popular as a dried pod or in powder form, it is a very flavorful ingredient in many mole sauce.

Cultural Requirements:
