We try to use as much local food ingredient as available. All our lamb is locally grown/chemical free and so is all of our beef, from B&B(Barney's) farm in Grinnell and other farmers in the area. Our chicken are free range, chemical free from an Amish company. our dairy products come from Hanson Dairy in Hudson, IA. All our herbs come from Mariposa farms locally. In season, I use whatever the local farmers can provide me in produce and year round, my honey is from Schmidt's farm near Marshalltown. One of my goals is a year round market that feature local products modeled on the CSA concept.
