Hill & Vale lamb

I have bought a whole lamb from Joe and Bonnie at Hill & Vale a few times. I'm from Iceland, where we purport to raise the best lamb in the whole world... but now, I'm not so sure. Perhaps one has to go to Joe and Bonnie for that!The meat is absolutely superb, tender, succulent, deep, sweet flavor, just delicious. And Joe and Bonnie are wonderful, they go out of their way to have the lamb done the way you want it (although I couldn't get my legs and rack with the thin inner skin on it, for some reason, weird, because it's a lot of work for the processor to remove it), but that's not their fault. I absolutely recommend their lamb, it's just world class. Iris Erlingsdottir Lee
