Our first locally raised chicken

My wife and I have recently moved from the " 'burbs" out to a quiet little acre in a farming community. Being in such close proximity to locally raised goods has opened us up to a huge leap in quality of foods. The chicken that we bought from Crowfoot was our first to be locally raised and it most certainly matched and exceeded expectations. We roasted the 4.5 lb bird with the recipe suggested by the owners, we added a little crushed red pepper and thai chili for a little extra zing.
The bird was exceptional, the meat tender, the skin crispy and the bones will make a wonderful stock. The birds coming from Crowfoot Farm are well worth your money.
