Best chicken ever!

Deb and Sarah are usually available every week at the Rochester Downtown and Winter Markets. I have purchased eggs and many whole chickens from them, and they are always helpful with any question I might have. As for the chicken? It is amazing. If you have been eating commercially raised and store-bought chicken, you have probably forgotten what good fresh chicken should taste like! I usually roast mine whole, seasoned with olive oil, salt, pepper, and some thyme on a bed of carrots, celery, and onions. A thawed 4-lb chicken is done in a 375 degree oven in about 75 minutes. The meat is tender and juicy and so full of flavor that I usually simmer down any leftover bones to make delicious chicken stock. The tasty Summer Hill Farms birds elevate chicken from that stuff-we-eat-when-we-don't-know-what-to-cook to my family's favorite Sunday dinner. The cost may be more than the grocery store, but it is worth every penny.
