Alpine Lakes is still making some of the best artisan sheep cheese in North Central Washington. I just saw a delightful article in Sunset magazine (May 2011) about the owners Eric and Catha Link, who are planning another season of their popular cheese-making classes. My whole family loves their Belora, kind of like a Camembert with a tang. Our monthly bread-and-cheese night wouldn't be the same with a chunk of Catha's Mountain Tomme! My teenage son has another favorite guilty pleasure: he loves to stuff jalapeno peppers with the creamy Belora, wrap the whole thing in a slice of bacon, and fry for an after-football snack. Keep up the great work guys and we hope to see you at the farm sometime this summer!
