Whole Chicken, amazing

Just met Angela and her family this past weekend & they are fantastic!! We purchased our 1st whole chicken and prepared it, just like she advised me to & it came out GREAT!! They are what it's all about, sharing our love for farm fresh local food. We are definitely looking forward to enjoying everything they have to offer us. Here's our recipe:
Ingredients: 3.8 lbs frozen whole chicken 1 lemon, zested and sliced 1/2 onion, quartered 1 T rosemary, chopped 1 clove garlic, grated Seasoned with olive oil, salt, white pepper and paprika
Approximate cooking time: 20 mins per LB
Preheat oven to 350F. In a 5 qt dutch oven, lay lemon slices on bottom, place chicken (still frozen) on top of lemons, then add in onions. Wait to season it til it's cooked a bit. Cook covered for 1 hour, then remove and add rosemary, garlic, olive oil, salt, pepper and paprika. Place back in oven and cook for an additional 30 mins. Then remove lid and continue cooking about 20 mins to brown the skin. Remove and let rest for 10 mins. Serve and ENJOY!!!
