Roast Duckling

I purchased a young duckling, plucked and processed cleanly. It was easy to prepare a simple roast duck recipe with such a clean bird. It was wonderfully moist and juicy. The duckling had more than enough meat for 2. Duckling is a lovely fall dish prepared with acorn squash and spring mix! 2 Forks Up!
