Fabulous fresh chicken

Our family purchased 5 fresh chickens this past fall from Green Pastures Farm. This year instead of doing turkey for Thanksgiving, we decided to do chicken. What a great decision! We pulled 3 of our nice chickens out of the freezer, brined them overnight, and then cooked them for Thanksgiving dinner. We smoked two of them on the grill all day long on low heat using charcoal and a mix of hickory and apple wood chips. The other one we baked in the oven for those averse to smoke flavor. Our family and friends were treated to some of the best chicken we've ever had. Absolutely juicy, tender, delicious and beautiful on the platter. Everyone was raving about it. Elliot and Hudson, thanks for helping make our celebration of God's goodness to us such a success.
