Shady Hill was only at our local farmers market here in Chatham a few times this past season, but my family sampled and cooked with their pork enough to give them a 5-star review! Unfortunately they kept selling out of most items earlier in the day than we typically visit, but I was lucky enough to score the last pound of bacon one Saturday. We had some for breakfast one morning and could immediately tell a difference from the typical grocery store bacon even as it was frying in the pan. The taste was incredible and my family's only disappointment was that it wouldn't be a regular addition to our weekend big-hot-breakfast tradition. I was able to save a few pieces to use for dinner one evening when I made beef bourguignon and we all voted it hands-down as the best we've ever tasted! Highly recommend and hope they return to Chatham Borough Farmers' Market again next year. I may even have to setting my Saturday alarm earlier to get to their stand before they sell out!
