
Pork

We ordered half a hog this year and were extremely pleased with the results. The pork was lean with white, not yellow, fat. There was an impressive amount of meat from this animal. The butcher processed the hog in a way that made sense for our small family. Butchering costs were very reasonable; the meat was nicely packaged, labeled and frozen. The roasts came in two sizes which makes meal preparation easy to plan. My mouth was watering as I unpacked the smoked meat. We have two large hams plus several slices of ham individually wrapped for smaller meals. The bacon was mostly meat, very little fat. It almost resembled Canadian bacon in it's meatiness. We ended up with 7 trays of bacon from our half. It is hard to match the quality and price of this meat in the grocery stores. The eggs from the farm were fresh and tasty. The yolks and whites held their shape. Ron & Vicky were very prompt in answering questions. They kept us informed about the status of our order as it was being processed.
