For the past several years I have been on a hunt for the best eggs within a reasonable proximity to my home. I am so excited to have found the Richardson Farm as, given the quality of their eggs, my search seems to be over! There are a variety of free range laying hens that greet you when you pull into the small driveway on the side of the house. The eggs themselves are equally diverse in both size and hue. The true epiphany came when I cracked 6 of them open to make homemade pasta. The yolks were as they should be: bright orange-yellow in color. I have been so used to pale yellow, anemic eggs that the color of these yolks took me pleasantly by surprise. These are the type of eggs that are laid by hens that have a low-stress, free-ranging lifestyle. Diversity of diet and exercise leads to a better product. My only suggestion for the purveyors of these marvelous eggs is to find a way to get them out to the farmers markets and/or promote them as much as possible. Where I grew up, in rural New England, people are paying upwards of $6 a dozen for eggs that barely match the quality of these eggs. The Richardsons are charging only a fraction of that cost for some of the best eggs that I've found in the WNY region!! Mangia Bene!!
