Rio Culebra Cooperative is owned by farmers and ranchers in Costilla County, Colorado. Our cooperative is committed to sustainable agricultural practices that protect our health, our community and our environment.
We market grass-fed beef that is raised in the high mountains of Colorado. This beef is raised without any antibiotics or added hormones, and processed at a nearby USDA approved harvesting facility. The cattle have been born and raised on our ranches.
We also market chicos. To make chicos, corn is harvested by hand, then fire-roasted over night in a traditional horno earth-oven then gently removed by the cob. The corn varieties used by our farm families, have been passed down from generation to generation.
Our community is unique. For over 150 years, our farm families have been commited to sustainable farming methods, and carry on the traditions of acequia irrigation. Our farms lie at the base of the Sangre de Cristo Mountains. Our water is delivered directly from the snowpack to our farms through acequias, a network of gravity fed irrigation canals. The acequias are are central to our way of life. We work together to collectively allocate, distribute and steward our precious water and land resources among the members of our community.
