River Organica is the only truly sustainable bakery/cafe in North America. Our motto is "If it's not LOCAL it's not Food." We contract with local farmers to grow the heritage grains we use. 90% of all our ingredients come from the 4 surrounding counties. There is no wheat, no sugar, no flour, no soy, no corn in our products or in our bakery/cafe. The grain we use is Emmer - Triticcum diccocum and it contains as much gluten as quinoa - the mother grain. I call emmer - the Velvet Grain. To know it is to understand.
Our breads, 24-28% protien, no gluten, are made of 100% fresh milled Washington grown heritage grain emmer. It is stone ground as we use it, slowly to maintain the important oils and nutrients.
