Best known for the flavor it provides to Thanksgiving turkeys, Sage need not be reserved for this use alone. It works well in dishes featuring pork, cheese, beans, & poultry and is a flavorful addition to herbed biscuits, lima beans, peas, zucchini, & cream soups. Sage leaves provide an excellent accent for baked squash & other winter vegetables. Dried sage goes well with other assertive herbs, such as rosemary & thyme.
Historically, sage was prized for its ability to aid in the digestion of fatty meats. Sage can be used as a remedy for respiratory infections, nasal congestions, coughs, tonsillitis & sore throats. It is also a stimulant for appetite, relieves indigestion & has a beneficial effect on the liver. It's given for night sweats, nervous sweating & kidney/urinary-tract problems. Some women also find that it helps to alleviate menopausal symptons. Sage inhibits milk production by the mammary glands. Drink 1-2 cups of sage tea daily for a few days after your baby is weaned to help stop the flow of milk.
