This variety is considered by many chefs and cooking enthusiasts to be the PERFECT paste and sauce tomato. An old-time favorite in Italy, this particular variety is called for by name in many recipe books for use in pizza and pasta sauces, homemade ketchup, and soups. It makes a big difference in the flavor of your sauce if you use this variety instead of a generic paste tomato.
Stocky, bush-like plants produce later than most other paste varieties. Heavy harvests hang on the sturdy plants in large clusters. Fruits are brilliant red, elongated and 4" long. They hold well on the vine and keep well in storage. The fruits have very few seeds and a low moisture content which makes them perfect for canning, drying, and processing.
