Sap Bush Hollow is a diversified pasture-based livestock farm that supports three generations of the Hayes family. Our rolling hills in Schoharie County are home to beef, pigs, sheep, chickens, turkeys, geese, guinea hens, a couple of useless cats and a few too many dogs.
Our products include grass-fed beef, lamb, heritage breed pork, poultry and eggs. We process most of our meat ourselves in our on-farm cutting facility, making it possible to guarantee top quality, and to offer our clients custom cutting. We also produce a phenomenal line of sausages, including Sweet and Hot Italian, Chorizo, Romanian Feef Mustard, Chili-Ale, Sicilian Parmesan, Tuscan Sundried Tomato, New England Farmhouse Apple, Bratwurst, Kielbasa, and Traditional Country Breakfast links.
Our meats are available for purchase on the farm during our regularly scheduled monthly open house days (see our website), by appointment, at the Pakatakan Farmers' Market in Halcottsville (outside Margaretville, NY), and through our Grass-fed Community Program, a series of delivery routes throughout the region.

Pakatakan Farmers' Market, at the Round Barn, on Route 30 in Halcottsville, just outside Margaretville, NY. The market is open from 9am to 2pm. Our booth is the first one you see as you enter the round barn.
Our farm is open year-round. We schedule regular monthly open houses (see our website or call for dates and times), or you can call ahead for an appointment.
