We plant the organic seed, grow the cabbage organically, hand slice the cabbage and turn it into sauerkraut in a 5 gallon crock. Then we add a touch of caraway seed and process it in accordance with USDA recommendations; preserving the beneficial enzymes and destroying the harmful bacteria.
The finished product is Delectable!
Sauerkraut is versatile for use in many different main and side dishes. Or try it straight out of the jar!
Ingredients: Organically grown cabbage, sea salt and caraway seed.

Our community is in a remote area along the Columbia River where most of the property is 20 natural acres or more and all of the producers are small family operations (except one large cattle rancher that doesn't sell to us, but DOES shop with us!).
Most of us qualify to become Certified Organic, and a few sell enough products outside the area to be able to actually afford the annual fees. There IS a difference in the quality of life for those who have been long time organic growers!
