For our Smoked Paprika Powder we use farm-grown Hungarian Buldog peppers, picked red ripe and super sweet. We then slow-dry them over hickory chips to impart a rich, smoky flavor. Wonderful in any recipe calling for conventional paprika, and especially tasty in soups, stews, rubs, marinades, goulash and paella.
