In the 30's and 40's, the Sierra foothill community of Paradise was home to a thriving assortment of small orchards and truck farms. Now, over fifty years later, Sawmill Creek Farms is looking to revive that tradition, starting with our own three acre parcel on the edge of town. For almost a decade we've been growing a wide array of edible crops, using only natural soil amendments and farm-raised compost. And while most of our efforts have been focused on plant starts and fresh produce, a few years back we started experimenting with dried seasonings for use throughout the year. Our first revelation came when we started growing our own paprika. Forget that insipid red powder you sprinkle over deviled eggs! Once you've tasted fresh-ground, farm-grown paprika, you'll never look back. Then we started smoking the peppers before drying, as is common in Spain and Mexico, trying a variety of hardwoods and smoking techniques. The next step was drying a wider selection of chilis from Eastern Europe and Latin America. Lastly, we've been playing around with blended powders, such as our Ming Mix, a combination of dried tomatoes and chipotle. If you're like us, and love to cook, you're always on the lookout for that 'secret ingredient', the magic touch that can turn a pretty good meal into something extraordinary.
