This cheese press was designed for the home cheesemaker. It fits on a counter with dimensions of 2 feet by 1 foot. This is much smaller and more convenient then the Dutch Lever press. It has feet to prevent scratching counter tops. The press folds for easy storage. Made of solid maple and finished with beeswax, it is easily cleaned.
Pressure is applied by adding water to a small bucket (not included) at the end of a lever. The press is calibrated to generate 160 pounds of pressure with 1 gallon of water -- no weights to lift or balance. Increasing or decreasing the amount of water adjusts the weight on the cheese.
Unlike the Wheeler press and homemade variations, pressure on the cheese is consistent throughout the pressing as the removal of the whey automatically lowers the lever arm maintaining pressure on the curd. Included are three different length rounded pushers. Use your own molds and followers in a bowl to catch the whey, all of which fit on the base. The press is patent pending.
