Plain Cheddar

Our irrigation season is from April thru mid-October.....we have 60 acres of fescue/clover pasture that our cows graze....we use no herbicides or pesticides on our pasture!...

Our cheese (and home made butter for ourselves) is yellow because our butterfat is yellow, from the beta carotenes and other good things from green pasture.....chickens on pasture produce those bright orange yolks....the same thing happens with milk.....folks today think the "normal" color of milk is white.....un-homogenized full fat milk with the cream on top is YELLOW, and that is the normal color of milk!.....99% of the milk in the united states i call "feedlot milk".....the cows are fed a scientific diet of hay/grain/protein supplements....(total mixed ration).....this is not a normal cow diet, hence, it is not "normal" milk!.....our cheese is special for many reasons, but the main reason is that the milk is what it should be to start with.....
