Native American food. Sunchoke is a member of the sunflower family. The tubers are crispy and sweet, similar to water chestnuts or jicama when fresh. If cooked, they taste similar to potatoes. They also pickle nicely.
The starch in sunchokes contains inulin, which is a fiber that supports healthy probiotics. Some people experience difficulty digesting inulin, and if you are one of them then you may appreciate pickling the sunchokes first.
