Our 24-acre orchard of Mission, Manzanillo, Hojiblanca, Arbequina an Picual olive trees is harvested by hand. We then cold press the olives within 24 hours (typically within 12 hours), in order to ensure the freshest, most flavorful oil. We naturally decant each batch rather than filtering the oils. The oils are then blended to create the best mix of flavors and to maintain the highest level of health benefits.
