Traditional Pork Harvest, Grants Pass OR

Through three day-long classes, we will slaughter, butcher and cure two pigs in the traditional way. This is a hands-on course so you learn everything by doing in the context of a home kitchen. Per our habit, we will cure without nitrate, dress the animal without skinning and butcher without machines.
