Wheatgrass juice is made from the wheatberry seed sprouts and it is supposed to be one of the most complete foods in nature. Wheat grass proponents claim that two ounces of wheatgrass juice or extract provide the same nutrient value as to 2.2 pounds of fresh vegetables.

Among its many virtues are its detoxifying and regenerative properties. Some people swear it has helped them recover from Chronic Fatigue Syndrome and others claim it helps fight cancer.

But how did people realize in the first place that wheatgrass juice is so beneficial to health? Well, it seems that in the early 1900's, a gentleman by the name of Edmund Bordeaux Szekely came across a translation of a biblical manuscript on ancient eating habits which spoke wonders of freshly sprouted grasses for the health. He was convinced after trying it himself and wrote several booklets on the matter.

Later studies revealed wheatgrass contains more chlorophyll (the green stuff which makes it so special), than any other plant. It should be consumed a few days after sprouting, when at that vivid green stage. It's at this stage that it develops the maximum nutrient power, it is the crucial moment when all the young wheat sprouts are gathering all their energy and there is a maximum concentration of enzymes, vitamins, minerals and amino acids.
