This whole grain cornmeal is ground from a colorful heirloom corn grown without pesticides or chemical fertilizers at Salamander Springs Farm in eastern Kentucky.
We are a small-scale un-mechanized farm. Our soil has not been tilled into powdery dust, instead is treated with lots of TLC and organic mulches. It is teaming with life and organic nutrients which feed our crops--not petroleum-based chemical fertilizers!
Unlike cornmeal sold in grocery stores, in which the nutritious bran and germ have been removed for longer shelf life, this cornmeal is whole grain. Like wheat germ or whole wheat flour, long-term storage at room temperature promotes rancidity, so we recommend storing your cornmeal in the freezer or refrigerator. It is so yummy that it's doubtful you'll have it around long enough for that to happen!
The package includes a quick recipe for a crunchy skillet cornbread unlike any other you have tasted. (If you don't have a cast-iron skillet you can bake it in a glass baking pan, though it's not as fun).
