This whole grain cornmeal is ground from a colorful heirloom corn grown without pesticides or chemical fertilizers at Salamander Springs Farm near Berea in eastern Kentucky.
Salamander Springs Farm is a small, un-mechanized farm run accordance with permaculture principles. Our soil has not been tilled into powdery dust, instead is treated with lots of TLC, organic compost, cover crops and mulches. It is teaming with life and organic nutrients which feed our crops--not petroleum-dependent, extracted fertilizers!
Unlike cornmeal sold in grocery stores, in which the nutritious bran and germ have been removed for longer shelf life, this cornmeal is whole grain. Like wheat germ or whole wheat flour, long-term storage at room temperature promotes rancidity, so we recommend storing your cornmeal in the freezer or refrigerator. It is so yummy that you likely won't have it around that long!
The package includes a quick recipe for a crunchy skillet cornbread unlike any other you have tasted. (If you don't have a cast-iron skillet you can bake it in a glass baking pan, though it's not as fun).
