A classic Camembert style cheese with a lovely edible white bloomy rind that is sometimes mottled with flecks of tan, blue or orange as the cheese ages. The cheese has a firm body when it is young. As it ages the body becomes softer and creamy. At the peak of ripeness is becomes runny at room temperature. When young it tastes of milk and grass with some tanginess from the cheese cultures. As it ages it develops a lovely forest floor aroma and buttery, mushroomy flavors with a natural sweetness to the rind.
Pair with lighter bodied reds, such as domestic pinot noirs or French Beaujolais.
For a white wine pairing we suggest wines with a touch of sweetness to them, such as Pinot Blanc or Gruner Vetliner.
