Adapted from the television show Two Fat Ladies.
Mitten of Pork.
Make about 6 ounces of Sage Onion Dressing for later use.
8 ounces thick sliced bacon
1 1/2 pounds pork fillet sliced about 1/8 inch thick
salt and freshly ground black pepper
1/2 teaspoon mace
Preheat oven to 350 degrees F.
Line a 7" pudding basin with bacon strips, reserving a few for the top. Place one layer of pork, then a thin layer of stuffing, followed by salt, pepper, and mace. Continue this layering process until the basin is full. Finish the top by sealing it with the reserved strips of bacon. Press down and cover tightly. Place the basin in a pan to catch drippings and place in oven. cook for 1 hour. Remove from oven, remove cover and weigh the top down with a board of bowl to compress while cooling. When completely cool turn it out of the basin and serve sliced.
