March winds bring April showers!! Healthy foods and tight budgets make creative cooks!!!

As the beautiful fluffy white and blue clouds roll across the sky and the sun peeks through now and then on this first day of March excitement peaks... Baby chicks are to arrive in a few days and gardening time is just around the corner..... Why should this bring so much excitement? Being a farmer's wife and a mother of 12 children, 11 which are still at home and love to eat 3 times a day, what is more exciting then to cook clean food you know is clean of GMO'S, herbicides and pesticides. Cooking can be a challenge no matter how many people you're feeding. A few very important things come to mind when we think of feeding our family. Mine are... Healthy food, and very delicious, BUT the budget needs to reach. This can be a huge struggle, or, it can be a challenge. With an apron in hand, and our hair tucked behind our ears we shall soon have supper on the table. Since supper is in a few hours we will go to the refrigerator first. What can we find of leftovers that will go together in a potato soup? Any meat, vegetables, broth, or maybe we have to quickly thaw one or the other or peel a few potatoes, carrots or onions. With a few seasonings like salt and pepper we'll soon have a delicious soup or stew simmering. If you feel creative open a few spice containers and a small whiff next to the simmering pot will tell you if it go's together with what you already have going. Being creative and smiling A LOT is our biggest budget saver! Cook up a storm and let love hide the chore of cleaning up! Have fun! :)
