Food from the Farm: Rhubarb Sauce |

- 4 cups chopped rhubarb (look for stalks that are mostly red or reddish)
- 1/2 c. honey or 1 c. sugar
- 1 T. tapioca
- 1 t. cinnamon (optional)
Combine. Let stand for 10 minutes or until some juice forms. Heat slowly to boiling. Cool and serve over ice cream. Or try stirring in sliced strawberries or raisins and serve for breakfast or as a side dish, in place of applesauce.

Just love this recipe. Brings back such good food memories of Rhubarb Sauce cooking on Mom's stove. This is delicious either warm or cold.

Rhubarb sauce can be used on anything! You can spread it on a piece of toast, sprinkle some granola on it, put a dollop on your hot cereal in the morning or eat it all by itself. As a treat I like to have it with a few sliced strawberries or over a little vanilla ice cream. Enjoy!
