Farm-Fresh Food: Roasted Broccoli

We eat a lot of broccoli in the winter, and if we have the oven heated up for something else will often throw the broccoli in to roast. It looks beautiful and feels special. The exact same method can also be used for cauliflower, and is equally delicious.

Preheat the oven to 400 degrees. Cut one bunch broccoli into 1.5" pieces, peeling the thick part of the stem and preparing that too. Mince 4-6 cloves of garlic. Put the broccoli and garlic into a roasting pan and drizzle with enough olive oil to coat. Salt to taste.

Roast until as tender and browned as you prefer, shaking or stirring every 5-7 minutes.

Remove from oven and squeeze the juice of half a lemon over the vegetables and/or a sprinkle of red bell pepper flakes for kick (optional). Top with a little grated Parmesan cheese if it's a special night, and serve.
