At my house we eat a lot of cauliflower this time of year. Delicious, nutritious, quick -- we can't get enough. I almost always roast it first. Sometimes I serve it just like that, as a side dish; other times I make it into something more substantial. Here is an easy recipe for roasted cauliflower and two ideas for planning meals around it.
Preheat oven to 400 degrees.
Chop one head cauliflower into 1 1/2" chunks and put in a roasting pan. Drizzle with olive oil and sprinkle liberally with salt. Stir. Roast on middle shelf of the oven for 10 minutes. Remove and shake the pan to loosen the cauliflower and keep it from sticking. Return to oven for 5 minutes or until cooked to desired level of tenderness. Taste for salt.
Roasted Cauliflower Chicken Pasta
Toss one large head roasted cauliflower with boiled whole wheat rotini pasta,chunks of roasted chicken breast, 1/2 t. red pepper flakes, 1/2 c. chopped parsley, 1/2 c. grated parmesan, 1/2 cup chopped green olives, 3/4 t. salt and 1/3 c. olive oil. Mix well and serve.
Roasted Cauliflower with Blue Cheese
Toss one large head roasted cauliflower with 1/2 c. blue cheese, or to taste. Add 1/4 c. chopped parsley. Serve over brown rice with a side salad for a nice lunch.

Roasting cauliflower is also delicious by sprinkling in nutritional yeast(tossing to coat) and roasting for another five minutes. Yummy and healthy!
