Colonial Classics Farmstead Cheese is made with whole raw cow milk, vegetable enzymes and sea salt. It is a stirred curd farmstead cheese with varying degrees of sharpness and flavor. Our cows live on pasture all the time and we only make seasonal farmstead cheese when pasture is available which gives its distinctive color. We are farmers, we are cheesemakers....but first and foremost.....we are grass farmers.
