The owner and cheese making instructor, Paula Butler is the former President of the Volunteer State Goat Breeders Association, VSGBA and the current Vice President for the International Nubian Breeders Association, INBA. I have taught small private classes, team building events for major corporations, and many large classes at conventions.
One of my most asked questions is, Why did I choose Nubians? Nubians are one of the most sought after breed of goats due to their outstanding ability to produce sweet, rich tasting milk. Their milk, contains a higher butterfat content as compared to other goat breeds. This added fat content is great for producing cheese, fudge, ice cream, and butter. Not to mention how loving and adorable they are but once you know the bond with a Nubian goat it?s easy to understand how they became so popular.
In addition to goat milk cheeses, I enjoy and make a variety of cow, sheep and combination of milks as well.
I have retired from breeding and actively raising dairy goats but continue my passion of cheese making by always striving to produce "Old World Style" cheeses from the highest quality ingredients available and the freshest herbs.
