Brrrrrrr! There is a wee bit of a nip in the air this morning. Guess it is time to pack away the summer shorts and bust out the long britches. It's a melancholy time for me...I love the crisp fall days but I will miss the heat of the summer days too. The great thing is the season change brings many new items to the market. Fall is not fall without pumpkins, butternut squash and beautiful deep green kale! Hey, don't forget the summer hanger-ons too! I think I made up a new word, but you know what I mean. The tomatoes, zucchini, peppers, etc. that still keep growing up until that first frost hits.
By the way, I froze a gazillion peppers this past week...it's so easy. I wash, pat dry and then cut them. This is where I always seemed to spend more time than necessary...until my hubby showed me an easy way to avoid scooping out the seeds in a bell pepper. It was a “DUH” moment for me! Lol Simply set the pepper upright and using a sharp knife, start slicing downward from the stem...kinda in a curved motion so to avoid cutting into the core/seed area. You'll get about four sections that you can slice into smaller strips if that is what you want. No more picking seeds out! :) I then put them on a sheet/cookie pan and set in the freezer till frozen and then I store them in freezer bags until I need them. This way you can use only what is needed for that winter recipe that just has to have some peppers in it! :) One more little tip, the white or pithy part of the inside of the pepper is where any bitterness would come from, so slice it away!
Okay, enough blabbing from me...let's get to the important stuff like what you'll be able to find at the Bluegrass Farmers' Market this Saturday!
